As a material, sugar conforms to certain scientific principles. It draws water molecules from the air and can change with temperature from a solid to a liquid to a solid again. Like all matter it responds to the pull of gravity. And yet – handling sugar is delicate and unpredictable.

I began working with sugar to explore my own experiences as a diabetic. What does it mean to have a disease determined by science but experienced as uncertainty? How can one manage diabetes when invisible factors complicate the regulation of sugar in the body? My work embodies this struggle between scientific certainties and the lived experience of someone with chronic illness. While its forms can be managed and planned, my work remains vulnerable - responding to what surrounds it in infinitely unpredictable ways.
